Muh-Muhs cream

The absolute party star!

3 sheets of gelatine
2 egg yolks
40g sugar
0.1l Cream Muh-Muhs Liqueur
5 tbsp. milk
200 g cream
20 g brittle

This cream can be perfectly prepared in advance - and sets in the fridge within at least two hours – ready to become the star of the party! The delicious cream can also be prepared and left overnight prior to its big entry - sprinkle the brittle onto the top just prior to serving, so that it remains crispy.

First of all: Soak the gelatine in cold water for roughly 10 minutes.

Then place 2 extremely fresh egg yolks into a small bowl with the sugar. If you heat some water in a little pot and then place the bowl onto the rim of the pot, you can beat the egg mass like a professional using a hand-held mixer until it is thick and light in colour. However you must pay attention that the egg mass does not become too hot - otherwise the egg yolk will flocculate and that is NOT good.

If you have managed this, then place the egg mass aside to cool, and empty the water from the pot which you now need to heat the squeezed gelatine. Stir vigorously and heat the pot only until it starts to melt (actually, the residual heat from the cooker should be sufficient... provided you have not wasted too much time by tasting at the Cream Muh-Muh Liqueur...). Quickly take the gelatine from the heat and mix it first of all with just 1 tbsp. of the egg mass. Only once it is really smooth should the remaining egg mass be added to it. Caution: Do not produce any lumps - be careful! Now the Sahne Muh-Muhs Liqueur and the milk should also be added. Into the fridge with the well-mixed Sahne Muh-Muhs Liqueur cream until it starts to become hard! After that, the whipped cream just has to be folded in. If you then fill all this into glasses and decorate as you wish, even with a little motto, then there is no stopping this dish becoming the star of the party!

(However, do not forget to sprinkle the crispy brittle on top before serving - would be a shame otherwise!)
